TASTING NOTE
Scents of blackberries and ripe raspberries on the nose. Red berries and cherries on the palate. Spicy and full-bodied, yet elegant and juicy. Delicate wood notes, velvety tannins. Beautiful length with fine acidity.
VINIFICATION
Hand-picking and pre-selection in the vineyard. Optical sorting of the grapes at the winery. Spontaneous fermentation in stainless steel tanks. Gently submerging and flooding the mash cake several times a day. 22 days on the grape skins, biological malolactic fermentation in used French barriques. Subsequent storage and maturation until the first filling in large used wooden barrels.
