 TASTING NOTE 
 Deep, juicy, dark cherry fruit with a delicate note of nougat and dark chocolate. Full body, powerful and elegant. Fine precious wood spice, tobacco appeal. Wonderfully concentrated, long creamy finish. Nougat in the aftertaste, fine acid structure with velvety tannins. 
 
 VINIFICATION
 Hand picking and pre-selection in the vineyard. Optical sorting of the grapes at the winery. Natural fermentation in large wooden fermenters. Gentle manual punch downs and pumpovers of the grapes several times a day.  21 -24 days on the skin. Natural malolactic fermentation in new French oak barrels. Aging for 18 months in new barriques on full lees. Unfiltered and unfined, minimal sulphur addition.
