TASTING NOTE
Intense aromas of quince, citrus fruits, pear and white flowers on the nose, accompanied by fresh herbs. Subtle notes of hay, yeast plait and almonds. On the palate, the wine is fresh and lively, the creamy texture and the fine, elegant length are emphasized by the storage on the full yeast. The dry finish is underlined by mineral accents and a slight saltiness.
VINIFICATION
Hand-picking and pre-selection in the vineyard. Removal of the stems, then lightly crushing the grapes. 24 hours of maceration, then pressing of the grapes and spontaneous fermentation in stainless steel tanks. Storage on the full yeast for 6 months. No addition of sulphur.
